I just realized that it has been nearly one year since writing a post on this blog....yikes....it is not because there have not been travels, nor delicious meals. I guess life just got the best of me. Both Amy and I will try to do better this year in keeping up with our travel adventures.

Heart of palm ceviche

We are back in San Cristobal de las Casas, in Chiapas, MX. This is a place that is dear to our hearts and imagine the surprise when we found ourselves invited to a special "Vegan Italian Feast". It is amazing how we all find ourselves wherever we are. The fact is that San Cris is a very plant food friendly place with many restaurant options and markets galore with fresh fruits and veggies. See last year's post about many new fruits that I found.
Because this was such a special meal and because I am so unused to going to parties where I do not need to ask any questions, I thought I would share the menu and these pictures of the foods.

First course was the ceviche with hearts of palm. This was followed by meatballs (both with and without gluten) and pasta (same about the gluten). On the side were loads of grilled vegetables.

The dessert was banana bread (cake) with a cream of cashews.

Not only the food was great but it was a chance to meet new folks that live mostly year round here in and are connected with these monthly events. The community in San Cris is very international and inter generational and often Spanish is the most common language.This month's event was held at El Tzitz, the cooking school located on the same property that we live. The garden is filled with beautiful flowers which we get to experience everyday.
